Preheat oven to 350° F.

In two TBS Olive oil, saute 2 medium diced candy onions. While that starts, thinly slice one medium yellow squash and one zucchini and add to pan. Peel and grate one medium carrot. Combine with onion and squash, salt and pepper to taste and add either fresh basil, oregano or parsley and saute another 2 to 3 minutes. Dice 2 fresh tomatoes and add. Cube and add 2 slices of whole wheat bread. Sprinkle Provolone, Swiss, or Mozzarella cheese on top. Put lid on pan and take off heat. Let stand 5 minutes before serving as a side dish.
To make as a meal, bake 4 chicken breasts covered with a thin layer of mayonnaise for 35 to 40 minutes. While it bakes, double the ingredients of the above dish and prepare as directed. Nest the chicken breasts in a bed of Tuscan Splendor and enjoy
